Stir-fried squid with salted eggs
An exquisite dish with an original sauce prepared with the yolks of salted eggs.

Ingredients
300
g
of squid
cleaned and cut into pieces
4
cloves
of garlic
3
racines
coriander roots
(or stems without leaves)
1-2
bird chillies
(or more... or less... as you prefer)

tsp
of palm sugar
1
tbsp
of fish sauce
2
spring onions
cut in 3 cm pieces
1/2
sweet chillies
cut in thin slices
For the sauce:
1
tsp
of oyster sauce
1
big tbsp
of chili jam
(nam prik pao)

tbsp
of soy sauce
2
salted egg yolks
50 to 70 ml of water
Instructions
Mix the ingredients for the sauce: crush the yolks, add the oyster sauce, soy sauce and chilli jam. Stir and add the water.
Pound coriander roots with garlic and chillies.
Heat the oil in a wok, sauté the garlic and chilli mixture.
Still over medium-high heat, add the squid. As soon as they change colour, add the sauce mix, sugar and fish sauce.
Mix well and garnish with sweet chilli and spring onions. Serve hot with jasmine rice.
